3-Mercapto-2-methylpentan-1-ol (also known as 3-mercapto-2-methylpentanol or 3M2MP) is an alkanethiol with the chemical formula C6H14OS. It is a colorless to light yellow liquid with a strong sulfurous odor. 3M2MP is a natural product that is found in onions, garlic, and other Allium species. It is also produced during the thermal processing of foods, such as cooking, baking, and frying.
3M2MP has a variety of flavor and aroma properties. It is described as having a meaty, oniony, and leek-like odor. It can also be perceived as sulfurous, pungent, and sweaty. The flavor profile of 3M2MP depends on its concentration. At low concentrations, it has a pleasant meaty and roasty flavor. At higher concentrations, it can have a more sulfurous and pungent flavor.
